Rice Pinni is a Laddu prepared with rice flour, thickened milk, and dry fruits. You can prepare rice pinni in two ways, one with sugar powder and another with jaggery. Laddus prepare in both ways turn out amazingly delicious.
Follow the steps below along with the images to prepare delicious rice pinni.
Directions:
1. Dry roast a cup of rice flour over medium heat till fragrant.
2. Boil 1/2 liter of full-cream milk over medium heat.
3. After a boil, simmer the milk while frequently stirring till it becomes dense.
4. Add 1/2 cup of desiccated coconut to the rice flour and roast for 2 minutes.
5. Switch off the stove and mix 4 tbsp of ghee into the rice flour.
6. Add thickened milk to the rice flour and mix well.
7. Mix 1/2 tsp of crushed cardamom powder, 2 tbsp of almond flakes, 2 tbsp of pistachios flakes, and 2 tbsp of chopped raisins in the mixture.
8. Divide the mixture into two portions.
Sugar Rice Pinni:
9. Mix 1/2 cup of tagar/boora in the mixture.
10. Bind the mixture into laddoos.
11. Sugar rice pinni is ready to be served.
Jaggery Rice Pinni:
12. Add less than 1/2 cup of jaggery chunks and 2 tbsp of water to a pan.
13. Melt the jaggery over low-medium heat and simmer till it attains one-string consistency.
14. Pour the syrup through a sieve into the mixture and mix well.
15. Bind the laddus from the mixture.
16. Jaggery rice flour pinni is also ready to be served.
