Today’s recipe is a winter special Indori Chaat called Garadu Chaat. It is a fried yam recipe served as a street in Indore city. Yam is a nutritious vegetable that you should have once a year. The preparation of Garadu Chaat requires no special efforts, and it gets ready in no time.
Follow the directions along with the images to prepare delicious and crispy Garadu Chaat.
Directions:
1. Peel 3-Garadu/yams after applying oil to your hands.
2. Cut yams into 1/2 inch thick slices.
3. Add yam slices, more than 1 cup of water, and 1 tsp of salt to the pressure cooker.
4. Pressure cook the yams for a whistle.
5. Heat a pan to prepare garadu chaat masala.
6. Dry roast 1 tsp of cumin, 1 tsp of coriander seeds, and 1 tsp of fennel seeds.
7. Next, add 1/2 tsp black pepper, 1-cinnamon stick, 4-cloves, 2-black cardamom seeds, and dry roast them for half a minute.
8. Turn off the flame and add 1-pinch hing.
9. Add spices to the food processor after cooling.
10. Add 1/2 tsp of turmeric powder, 1 tsp of salt, 1 tsp of black salt, 1 tsp of sugar, 1.5 tsp of red chili powder, 1/2 tsp of ginger powder to the food processor.
11. Pulse everything into a fine powder, and Garadu Masala is ready.
12. Transfer the yams to the strainer and drain out the water.
13. Wash the pieces in the strainer with fresh water.
14. Transfer the pieces to the board and allow them to cool down.
15. Cut yams into small pieces after cooling.
16. Fry the yams in medium-high hot oil till golden brown from all sides.
17. Take the fried yams out in a bowl.
18. Add 2-3 tbsp of garadu masala to the yams and mix well.
19. Add 1/2 lemon extract to the fried garadu and toss till well mixed.
20. Garadu chaat is ready to be served
- Garadu/Tapioca/Yam - 500 gms
- Salt - 1 tsp
- and
- Oil for Frying
- Cumin Seeds - 1 tsp
- Coriander Seeds - 1 tsp
- Fennel Seeds - 1 tsp
- Black Pepper - ½ tsp
- Cinnamon - 1-inch stick
- Cloves - 4
- Black Cardamom - 2
- Asafoetida - 1 pinch
- Turmeric Powder - ½ tsp
- Salt - 1 tsp
- Black Salt - 1 tsp
- Sugar - 1 tsp
- Red Chilli Powder - 1.5 tsp
- Ginger Powder - ½ tsp
- Lemon Juice - ½ lemon
