  • Green chillies – 100 grams
  • Turmeric powder – less than ¼ tsp
  • Asafoetida – 1-2 pinches
  • Cumin seeds – ½ tsp
  • Oil – 1 tbsp
  • Coriander powder – 1 tsp
  • Fennel powder – 1tsp
  • Dry mango powder – ½ tsp
  • Salt – ¾ tsp or to taste
  1. Remove the stalks from the green chillies. Wash them thoroughly with water and then pat dry them. Chop some green chillies into bite size pieces and cut few of them longitudinally from the centre. Use a scissor for cutting them nicely and quickly. Place them in a bowl.
  2. Place a pan on flame and pour the oil into it. When oil gets heated, add cumin seeds into it. Once the seed starts spluttering, add turmeric powder, asafoetida and green chillies into it. Saute for a while.
  3. Add salt, fennel powder, coriander powder and mango powder into the chillies. Saute to mix everything really well. Keep the flame on low. Now cover and cook the chillies for 1-2 minutes. Check later.
  4. After 1 minute, remove the lid. Green chillies have turned tender but they are still crunchy. Stir fried green chillies are now ready. Turn off the flame. Transfer it to a serving bowl.
  5. Serve this tempting and spicy green chilly fry steaming hot as a side assortment with any meal and relish eating.
