Bhapa Sandesh | भाप में बना छैना सन्देश -आसान मिठाई । Steamed Sandesh Recipe

 

Sandesh is a popular sweet of Orissa and West Bengal. It is made up of lesser no.of ingredients and scrumptious to eat. It has a mouth-melting texture and serving it cold helps to make it more delicious. 

Here is a step by step recipe to make steamed Sandesh along with pictures. Serving it cold makes it scrumptious to make. 

Direction: 

Getting Ready:

Boil 2 litres of milk in a vessel. 

Extract lemon juice of 4 lemons. 

Coarsely ground green cardamom to make their powder. 

After boiling the milk, switch off the flame. 

Mix water to it similar to the quantity of lemon juice. 

Add it to the milk in intervals and stir it. 

Stir and mix until milk solid separates from milk water. 

After separating them, spread a cotton cloth over the strainer. 

Filter it and separate solids from the water. 

Add the separated Chenna to the water and wash it. 

Squeeze it well and remove excess water from it. 

Later on, add it in a grinder jar and whisk it into a smooth paste. 

Add a ¼ cup of milk and 6 tbsp of powdered sugar to it. 

Whisk it again for a while. 

Add cardamom powder to it and mix well. 

Grease a container with clarified butter. 

Add the paste in it, spread it evenly and tap it. 

Spread 15 to 20 saffron strands over it. 

Boil 2.5 and 3 cups of water in a vessel. 

Cover and boil it until the steam starts forming in it. 

After the steam starts forming in it, turn the flame to low and place the container in it. 

Cover and steam it on low to medium flame for half an hour. 

Remove the vessel after 30 minutes and let it cool down. 

After cooling it, place it in the refrigerator for 30 minutes to set. 

Separate its corners using a knife after 30 minutes. 

Heat its bottom for 15 to 20 seconds over the direct flame. 

Remove it from the container and cut its pieces. 

Remove the pieces and serve them. 

Suggestions

You can use full cream milk instead of cow’s milk.

Ingredients
  • Milk - 2 litres + ¼ cup
  • Lemons - 4
  • Powdered sugar - 6 tbsp
  • Green cardamom - 4 to 5
  • Saffron strands - 20 to 25
Instructions
  1. - Take 2 litres of cow’s milk in a vessel and boil it.
  2. - In the meantime, extract the juice of 4 lemons and make the powder of green cardamoms.
  3. - After boiling the milk, switch off the flame and add it to the milk in intervals.
  4. - Stir and mix it well within each round.
  5. - Stir and mix until milk solid separates from milk water.
  6. - Remove it from the vessel and spread a cotton cloth over the strainer.
  7. - Filter it using a strainer to separate the solids from water.
  8. - Add the separated Chenna to the water and wash it.
  9. - Squeeze it well to remove the excess water from it.
  10. - Later on, add it in a grinder jar and whisk it into a smooth paste.
  11. - Add a ¼ cup of milk, 6 tbsp of powdered sugar to it and whisk it more for a while.
  12. - Add cardamom powder to it and mix well.
  13. - Take a container and apply some clarified butter over it.
  14. - Add the paste in it, spread it evenly and tap it.
  15. - Place 15 to 20 saffron strands over it.
  16. - Take a vessel, add 2 to 3 cups of water in it.
  17. - Cover and boil it until the steam starts forming in it.
  18. - After the steam starts forming in it, turn the flame to low and place the container in it.
  19. - Cover it and steam it for half an hour on low to medium flame.
  20. - It was cooked after 30 minutes, remove the vessel and let it cool down.
  21. - After cooling it, place it in the refrigerator for 30 minutes to set it.
  22. - Remove it from the refrigerator after 30 minutes and separate it from the corners using a knife.
  23. - Heat it for 10 to 12 seconds from the bottom and remove it in the plate by flipping it upside down.
  24. - Cut it into your desired pieces and steamed Sandesh is ready to be served.
