Jodhpuri Mirchi Vada Recipe | आलू भरा मसाला मिर्ची वडा । Mirch Vada Potato Stuffed

 

Jodhpuri Mirchi Vada is unique in taste as compared to regular Mirchi Vada. It is spicier to eat and Vada is enough to end the hunger spank of one time. 

Here is a step by step recipe to make Jodhpuri Mirchi Vada along with pictures to make it perfect. Serving it along with green coriander dip or tomato sauce will help to enhance its taste more. 

Direction: 

Getting Ready:

For the batter 

Add some water to 1.5 cups of chickpea flour in a bowl. 

Stir and dissolve its lumps for the batter of pouring consistency. 

Add a ½ tsp of salt, turmeric powder, carom seeds after crushing them, red chilli powder to it. 

Add a ⅛ tsp of baking soda to it and mix well. 

Keep the batter aside to ferment for a while. 

For the stuffing 

Preheat a tbsp of oil in a pan. 

Add a ½ pinch of asafoetida to it. 

Add a ½ tsp of cumin seeds to it and roast it for a while. 

Turn the flame to low and add 2 finely chopped green chillies to it. 

Add 6 boiled potatoes to it after breaking them. 

Add a ½ tsp of turmeric powder, a tsp of salt, coriander powder and a ½ tsp of mango powder to it. 

Turn the flame to medium, cook while mashing and stirring the ingredients. 

Add a ½ tsp of Garam Masala, 2 to 3 tbsp of finely chopped green coriander to it. 

Pour the stuffing in a plate and let it cool down. 

For the Vada 

Chop and cut from side 6 thicker sized green chillies. 

Deseed and hollow them. 

Preheat oil in a wok. 

Insert some stuffing inside the chilli. 

Coat it well with the stuffing. 

Assemble all the chillies likewise. 

After assembling all the chillies, lift a chilli and coat it well with the batter. 

Lift the Vada holding its stalk. 

Add it in the wok for frying. 

Rightly heated oil and a medium flame is required to fry the Mirchi Vada. 

While frying the Vada, do not stir it in the beginning but, bounce some oil over it using the ladle. 

After a while, stir and fry it for 2 to 3 minutes until it becomes golden brown. 

After frying the Vada, drain it out and place it on a plate. 

Fry the rest of Mirchi Vada likewise. 

Suggestions 

  • You can add Chaat Masala instead of Garam Masala to it.

Ingredients
  • Green chillies (larger sized) -6 (150 grams)
  • Potato (boiled) - 6 (500 grams)
  • Chickpea flour- 1.5 cups (150 grams)
  • Green chilli (finely chopped) - 3 to 4
  • Ginger baton (grated) - 1 inch
  • Red chilli powder - ½ tsp
  • Asafoetida - ½ pinch
  • Green coriander (finely chopped) - 3 to 4 tbsp
  • Turmeric powder - 1 tsp
  • Coriander powder - 1 tsp
  • Cumin seeds - ½ tsp
  • Carom seeds - ½ tsp
  • Dry mango powder - ½ tsp
  • Salt - 1.5 tsp
  • Baking soda - ⅛ tsp
  • Garam Masala - ½ tsp
  • Oil - for frying
Instructions
  1. For the batter
  2. - Take 1.5 cups of chickpea flour in a bowl and some water to it for dissolving its lumps.
  3. - Add some more water to it for making its smooth textured batter. The batter should have a pouring consistency.
  4. - Add a ½ teaspoon of salt, turmeric powder, carom seeds after crushing them, red chilli powder to it.
  5. - Add a ⅛ teaspoon of baking soda to it and keep the batter aside to ferment for a while.
  6. For the stuffing
  7. - Preheat a pan, add a tablespoon of oil in it.
  8. - Add a ½ pinch of asafoetida to it.
  9. - Add a ½ teaspoon of cumin seeds to it and roast for a while.
  10. - Add 6 boiled potatoes to it after breaking them.
  11. - Turn the flame to low and add 2 finely chopped green chillies to it.
  12. - Add a ½ teaspoon of turmeric powder, a teaspoon of salt, a teaspoon of coriander powder, a ½ teaspoon of mango powder to it.
  13. - Turn the flame to medium, cook while mashing and stirring the ingredients.
  14. - Add a ½ teaspoon of Garam Masala, 2 to 3 tablespoons of finely chopped green coriander to it.
  15. - Pour the stuffing in a plate and let it cook down.
  16. For the Vada
  17. - Take 6 thicker sized green chillies, chop these and cut it slightly from a side.
  18. - Remove its seeds and hollow them.
  19. - Preheat oil in a wok for frying the Vadas.
  20. - Insert some stuffing inside the chilli and coat it with the stuffing well.
  21. - Assemble all the chillies likewise.
  22. - After assembling all the chillies, lift chilli and coat it carefully with the batter.
  23. - Lift the Vada holding its stalk and add it in the wok for frying.
  24. - Rightly heated oil and a medium flame is required to fry the Mirchi Vada.
  25. - While frying the Vada, do not stir it in the beginning but, bounce some oil over it using the ladle.
  26. - After a while, stir and fry it for 2 to 3 minutes until it becomes golden brown.
  27. - After frying the Vada, drain it out and place it on a plate.
