Rava Meethi Mathri Recipe | सूजी की क्रम्बल होने वाली कुरकुरी मीठी मठरी । Semolina Sweet Mathri

 

Suji Matari is a snack which is slightly sweet in its taste. It is a perfect tea time snack and has a crispier texture. Serve it to kids or guests as it is a perfect snack to satisfy your taste buds. 

Here is a step by step recipe along with pictures to make sweet Matari. This recipe will show you an easier process to make Sweet semolina Matari. 

Direction:

Getting Ready:

Mix a cup of semolina with a 1/3rd cup of wheat flour in a bowl. 

Add a tbsp of sesame seeds, 4 coarsely ground green cardamoms and a 1.2 cups of powdered sugar to it. 

Add a ⅓ cup of oil to it. 

Add a ½ cup of lukewarm milk to it and knead its soft dough. 

After kneading the dough, cover and keep it aside to set for 15 to 20 minutes.

The dough has also tightly expanded after 20 minutes.

Preheat oil in a wok. 

Grease a board with some oil. 

Mash the dough softly and divide into two equal halves. 

Roll a lump of dough between your palms. 

Flatten it into the thickness of ¼ cm and cut the round pieces using a cookie cutter. 

Remove the extra dough and separate these.

Flip and prick them from both sides.

Place them in the plate and prepare all the mathris in the same way.

The low to medium flame is required to fry Matari. 

Add Matari to it for frying. 

Flip and fry until golden brown. 

Mathris are golden brown from both sides so we will drain them out.

Stop the ladle on the corner of the wok so that extra oil moves back in it.

Suji sweet mathris are ready to be served.

Suggestions

  • Do not add an excessive amount of sugar otherwise, mathri will split. 
  • Here, we used fine semolina but, if you don’t have it then, you can use the thicker semolina.
  • Prepare the mini dough lumps. Roll them and flatten them for the mathri or you can take the larger sized dough and flatten it then, cut the Mathris. Opt for the method which you like.
  • You can use any cap or a smaller sized glass to cut the pieces

Ingredients
  • Semolina - 1 cup (200 gms)
  • Wheat Flour - more than ¼ cup (50 gms)
  • Powdered Sugar - ½ cup (75 gms)
  • Oil - ⅓ cup
  • Full Cream Milk - ½ cup
  • Green Cardamoms - 4 (powder)
  • Sesame Seeds - 1 tbsp
  • Oil - for frying
Instructions
  1. - Take 1 cup of semolina, add ⅓ cup of wheat flour, 1 tbsp of sesame seeds, 4 coarsely grounded green cardamoms, 1.2 cups of powdered sugar and Mix them properly.
  2. - Add ⅓ cup of oil approximately 6 tbsp and mix them.
  3. - Add ½ cup warm milk and knead the soft dough.
  4. - Cover and leave the dough to expand for 15 to 20 minutes.
  5. - The dough has also tightly expanded after 20 minutes.
  6. - Knead the dough to make it smoother for 2 to 3 minutes.
  7. - We took ½ cup of milk to knead this dough still there is 1 tbsp milk left in the cup.
  8. - Preheat oil in the wok, pour some oil on the board and grease it.
  9. - Divide the dough into two equal halves and cover ½ of the dough.
  10. - Roll the other portion of the dough to make a round ball.
  11. - Flatten it into the thickness of ¼ cm and cut the round pieces using a cookie cutter.
  12. - Remove the extra dough and separate these.
  13. - Flip and prick them from both sides.
  14. - Place them in the plate and prepare all the mathris in the same way.
  15. - Check the temperature of the oil as lesser heated oil is required to fry the mathris.
  16. - The flame should be low-medium
  17. - The oil appears desirably heated. Turn the flame to low
  18. - Add the mathris to fry, fry them for a while and flip when they start rising.
  19. - Fry until it is golden brown from both the sides
  20. - Mathris are golden brown from both sides so we will drain them out.
  21. - Stop the ladle on the corner of the wok so that extra oil moves back in it.
  22. - Fry all the mathris in the same way and it takes 4-5 minutes to fry the one round of mathris.
  23. - Suji sweet mathris are ready to be served.
  24. Serving:
  25. - We made 25 mathris from the prepared dough.
  26. - You can store them in any container after they cool down.
  27. Suggestions:
