Getting ready:

Clean the rose petals and then wash them thoroughly with water. Place them on colander so that the excess water drains out and the petals become dry. Then crush the rose petals with hand, you can also use mortar pestle for this.

Rinse the beetroot thoroughly with water and peel off its skin. Then chop the beetroot into small chunks. Roughly chop the green coriander as well.

Place a vessel on flame and pour 2 cups of water into it. When the water starts to simmer, turn off the flame and put the crushed rose petals into it. Immerse the petals completely in water, cover the vessel and keep it aside for 5-6 hours so that the water absorb all the essence of the rose petals.

Meanwhile, put the chopped beetroot, green coriander, mint leaves, basil leaves and a cup of water into a mixer jar. Put the lid on and grind everything into a fine paste.rose sharbat recipe

Transfer the paste into a vessel and put it on the flame. Cook the paste for 2 minutes to remove the raw taste of the vegetables then turn off the flame and let it cool down completely.rose sharbat recipe

Take 3 cups of sugar in a vessel along with a cup of water and heat until the sugar dissolves completely. When the sugar dissolves completely turn off the flame and allow it to cool down completely.

In the meantime, take the remaining sugar in a mixer jar along with green cardamom. Put the lid on and grind it into fine powder.

6 hours are done, strain the cooked vegetable paste through a sieve in a bowl and discard the pulp left on the sieve.

Now strain the rose petals water through the sieve into the same bowl, squeeze the water from the rose petals properly and discard the petals.

Pour this mixture into the sugar syrup along with sugar and green cardamom powder. Mix everything really well.

At last, cut the lemons into half and squeeze its juice into the sharbat. Mix it thoroughly.

Strain the sharbat once again through a sieve and place it in a bowl. Concentrated gulab sharbat is now ready.

Pour 1/6 portion into a glass and fill the glass with water. Mix it well and serve this refreshing and delicious gulab sharbat.

  • Rose petals – 250 grams (40 roses)
  • Sugar – 1 kg
  • Lemon – 6-7 (250 grams)
  • Beetroot – 1 (100-125 grams)
  • Basil leaves – 1 cup
  • Mint leaves – 2-3 tbsp
  • Green coriander - ½ cup
  • Green cardamom – 8-10
Instructions
