Atta dry fruit is a sweet which is most preferred in Punjab during the season of winters. It is stuffed and filled with dry fruits which are warm in nature. They help to keep the body warm because of their warm nature.
  • Wheat Flour - 2 cups (300 gms)
  • Tagar - 2 cups (300 gms)
  • Ghee - 1.25 cups (300 gms)
  • Almonds - ½ cup (75 gms)
  • Cashew Nuts - ½ cup (75 gms)
  • Dry coconuts - ½ cup (50 gms)
  • Muskmelon Seeds - ½ cup (50 gms)
  • Edible Gums - ¼ cup (50 gms)
  • Green Cardamom Powder - 1 Tsp
  1. - Melt ½ cup of clarified butter in the wok, moderately heated Oil is required to fry the edible gum.
  2. - Add ¼ cup of edible gum and roast on the low- medium flame for 3 minutes until they expand and colour changes.
  3. - Add ½ cup of Almonds, roast them on the medium flame for 2 minutes until they expand and colour changes.
  4. - Roast ½ cup of Cashews on the medium flame until light brown.
  5. - Dry Roast ½ cup of Muskmelon Seeds until they expand and colour changes on the high flame for 2 minutes.
  6. - Roast ½ cup of grated dry coconut while continuously stirring for 1 minute.
  7. - We roasted dry fruits in the wok so we will utilise the clarified butter after filtering it using a strainer.
  8. - Add ½ cup of more Clarified Butter in it, take 2 cups of Wheat flour and roast the flour on the medium flame while continuously stirring it until Golden Brown for 15 minutes.
  9. - There is a soothing fragrance which means it has roasted.
  10. -Switch off the flame and stir it for a while in the wok.
  11. - Coarsely grind the roasted Edible gum for it in the Mortar.
  12. - In the same way, we will crush the roasted Cashews
  13. - Add them in one bowl because we have to mix them, save some Cashews for the garnishing.
  14. - In the same way, we will crush the roasted Almonds
  15. - Add the crushed coconut in it, roasted muskmelon seeds and mix all the ingredients when they are hot.
  16. - Add 2 cups of Tagar and mix all the Ingredients
  17. - Add saved Clarified butter along with 1 tsp of Cardamoms powder and mix all the ingredients properly.
  18. - The mixture is ready so let's start making the Pinni
  19. - Lift some mixture and bind it into the round shaped ball.
  20. - Place a piece of cashew over it like this and bind it.
  21. - Make all Pinnis in the same way.
  22. Serving:
  23. - You can make 25 pinnis out of the prepared mixture.
  24. - Store them in a container and consume for the 2-3 months
