  • Rice – 1 cup
  • Powdered sugar – 1 cup
  • Ghee – ½ cup
  • Sesame seeds – ¼ cup
  • Cashew – ¼ cup
  • Green cardamom – 5
  1. Spread the rice on a clean and dry cotton cloth. Wipe the rice with one end of the cloth and clean them. Instead of this you can rinse the rice thoroughly with water and allow them to dry out completely.
  2. Chop each cashew into 5-6 small pieces. Place it in a bowl. Peel the green cardamoms. Using a mortar pestle, crush its seeds into fine powder.
  3. Heat a wok and place the rice in it. Dry roast it on medium flame until the rice grains turn golden brown in colour. Keep stirring continuously for about 15 minutes. When the rice is roasted aptly then turn off the flame and allow it to cool down completely.
  4. Once the rice cools down completely, transfer it in a mixer jar and churn it into a fine powder. Sieve the rice flour in a bowl. If any rice granules are left on the sieve then churn them again into a fine powder.
  5. Now place the sesame seeds in a hot wok and dry roast it as well. Roast the sesame seeds until it turns puffy and golden brown in colour. Sesame seeds are now roasted aptly. Turn off the flame.
  6. Add the roasted sesame seeds into the rice flour along with powdered sugar, green cardamom powder and half the quantity of ghee. Mix everything really well together. Further add rest of the ghee to it followed by chopped cashews. Mix everything really well. Mixture of binding consistency is now ready.
  7. To make ladoo, take small portion of the mixture and roll it out with hands. Press the mixture with both the hands and bind it into a firm ladoo. Keep the size as desired. Place the prepared ladoo on a plate. Similarly, prepare the rest of the ladoos until the mixture is utilized completely. Rice flour ladoos are now ready.
  8. Serve this delicious and mouth-melting rice flour ladoos as a dessert after any meal or have them whenever you crave for something sweet. Store these ladoos in an air-tight container and relish eating for about 2 months. Enjoy!
