Ingredients
  • Refined flour – 1 cup (120 grams)
  • Powdered sugar – 1 cup (150 grams)
  • Peanuts - ¾ cup (100 grams) (roasted and peeled)
  • Salted/unsalted butter - ½ cup (100 grams) (melted)
  • Vanilla essence - ½ tsp
  • Tutti fruitti – 2-3 tbsp
  • Milk - ¾ cup
  • Green cardamom – 6
  • Baking powder – 1 tsp
Instructions
  1. Take the peanuts in a mixer jar, put the lid on and grind it into slightly coarse powder. Peel the green cardamom and crush its seeds into fine powder. Grease a baking tray with some ghee or butter. Spread it evenly with a brush.
  2. Take melted butter in a big mixing bowl and add powdered sugar into it. Mix it really well. Keep whisking the mixture until it becomes smooth and fluffy. Add vanilla essence into it and again whisk the mixture to mix it thoroughly.
  3. Take refined flour in a big mixing bowl and add baking powder into it followed by green cardamom powder and peanut powder. Mix everything really well. Dry ingredients are now mixed and ready.
  4. Add the refined flour mixture into butter-sugar mixture. Mix it really well and knead soft dough. Add 4 tsp of milk into it and bind everything together. Dough for cookies is now ready.
  5. Dust the rolling board and rolling pin with some dry flour. Place the dough on it and roll it into ⅓ cm thick sheet by pressing it gently with the rolling pin.
  6. After that, take a heart shaped cookie cutter or any shape you like and place it on the rolled sheet. Press it gently and cut off the cookie. Similarly, cut the remaining cookies until the dough is completely utilized.
  7. Place them on the baking tray. Arrange the cookies maintaining some distance between them. Now place the red and green tutti fruitti on the top of each cookie with some distance between them. Press it gently.
  8. Preheat the microwave at 180 degree centigrade. Now keep the cookie tray on the net stand placed inside the microwave and bake the cookies at 180 degree centigrade for 12 minutes on convection mode. Check later. After 12 minutes, take out the tray. Cookies aren't baked yet. Place it back inside the microwave and bake them for another 5 minutes. 5 Minutes are over. Take out the tray. Cookies have turned golden brown in colour. It took 17 minutes to bake the cookies.
  9. Preheat the oven at 160 degree centigrade. Place the another batch of cookies inside the oven on middle rack and bake them for 10 minutes at 160 degree centigrade. After 10 minutes, take out the tray. Cookies have turned golden brown in colour. Let both the batch of the cookies cool down a bit.
  10. Once the cookies cools down slightly, transfer them on a plate. Peanut cookies are now ready. Serve these devouring and luscious peanut cookies as a dessert or have them whenever you crave for something sweet. When the cookies cools down completely, store them in an air-tight container and relish eating for 1-2 months.
