  • Refined flour – 1 cup (120 grams)
  • Powdered sugar – more than ½ cup (100 grams)
  • Almond powder - ½ cup (50 grams)
  • Unsalted butter – ½ cup (100 grams)
  • Cashews - ¼ cup (30 grams)
  • Almonds – 15
  • Green cardamom – 6 (finely crushed)
  • Baking powder - ¾ tsp
  • Milk - ¼ cup
  1. Chop each cashew into 8-10 small pieces. Place it in a bowl. Grease a baking tray with some ghee or butter. Spread it evenly with a brush.
  2. Take melted butter in a big mixing bowl and add powdered sugar into it. Mix it really well. Keep whisking the mixture until it becomes smooth and fluffy.
  3. Take refined flour in a big mixing bowl and add baking powder into it followed by green cardamom powder and almond powder. Mix everything really well. Dry ingredients are now mixed and ready.
  4. Again whisk the butter-sugar mixture and add dry ingredients and chopped cashews into it. Mix it really well and knead soft dough as required for making pooris. Add 1-2 tbsp of milk if required. Dough for cookies is now ready.
  5. Spread some dry flour on the rolling board. Place the dough on it and roll it into ½ cm thick sheet with the help of a rolling pin. After that, take a flower shaped or any shaped cookie cutter and place it on the rolled sheet. Press it gently and cut off the cookie. Similarly, cut the remaining cookies until the dough is utilized completely. You can use small bowl, cap of a bottle or shape them with your hands.
  6. Place it on the baking tray. Arrange the cookies maintaining some distance between them. Now cut the almonds into half and place a piece on the top of each cookie. Press it gently. Preheat the microwave at 180 degree centigrade on convection mode. Now place the cookie tray inside the microwave and bake the cookies at 180 degree centigrade for 12 minutes. Check later. After 12 minutes, take out the tray. Cookies haven't baked yet. Place it back inside the microwave and bake them for another 5 minutes. 5 Minutes are over. Take out the tray. Cookies have turned golden brown in colour.
  7. Place the another batch of cookies inside the oven and bake them for 8 minutes at 150 degree centigrade. After 8 minutes, take out the tray. Cookies have turned golden brown in colour. Let both the batch of the cookies cools down completely. Once the cookies cools down completely, transfer them on a plate.
  8. Serve these mouth-drooling and luscious cashew almond cookies rightaway. Store these cookies in an airtight container and enjoy them for about a month.
