Getting ready:

Wash the carrots thoroughly with water, drain out the excess water and allow them to dry out completely. Now peel the carrots and cut them from top and bottom.

Take a food processor and place as many carrots as possible into it at a time. Grate the carrots, similarly grate the rest of the carrots. You can also grate the carrots manually using a grater.

  • Ghee – less than ½ cup (80 grams)
  • Milk – 1.5 cup

Instructions
  1. Rinse green chickpea thoroughly with water. Drain out excess water from it. Dry out them completely. Then transfer the green chickpea into a mixer jar. Churn it to prepare a coarse paste of it.
  2. Chop each cashew into 8-10 small pieces. Place it in a bowl. Thinly slice almonds and pistachios and keep them in separate bowls. Peel green cardamom and crush its seeds into fine powder.
  3. Place a pan on flame and pour some ghee into it. Keep some ghee for later use. Once the ghee is melted, add green chickpea paste into it. Keep stirring continuously and roast the green chickpea paste until there is a change in colour and becomes fragrant. Keep the flame on medium-low. Move the spatula to the bottom of the pan and roast the paste.
  4. Ghee is separating from the edges of the green chickpea paste. It is now roasted well. Keep the flame on low and add milk and sugar into it. Mix it really well. Let it cook until it starts simmering.
  5. Once the halwa starts to simmer, cook it until it turns thick in consistency. Stir it at regular intervals. Now add sliced almonds and sliced pistachios, chopped cashews and green cardamom powder into it. Mix all the ingredients really well.
  6. Now halwa have turned thick. Pour some ghee on it. Mix it really well. Green chickpea halwa is now ready. Turn off the flame. Transfer the halwa in a serving bowl.
