Getting ready:

Pluck the soft spinach leaves and discard the stalk. Wash the leaves twice with water and place them in a colander so that the excess water gets drained out completely. Later, chop them finely with the help of a knife or chopping board and keep them in a bowl.Spinach and mushroom sandwich

Making:

Heat a pan with 2 tsp of ghee. When the ghee gets heated, add ginger and green chilly to it and saute them for a while. Now add mushrooms in the pan and stir fry them for 2 to 3 minutes so that they become tender.spinach and mushroom sandwich

Then add spinach in the pan followed by salt and black pepper powder. Mix everything thoroughly and cook them by stirring constantly until the moisture gets evaporated completely. As the stuffing turns dry, turn off the flame and let it cool down.spinach and mushroom sandwich

Making :

To make rava toast start with preparing the batter with semolina, curd and veggies. Take 1/2  cup Semolina in a big bowl, and add 1/ 2 cup curd to it. Mix till all of it mixes well. Aso add 1 finely chopped green chili with its seeds removed so that it becomes less spicy. Then add less than 1/2 inch of finely chopped ginger add it and then add 1/2 tsp salt. Add 2 tbsp finely chopped tomatoes, 2 tbsp finely chopped capsicum, 2 tsp green coriander and mix all the ingredients well to make the batter. Keep the batter aside for 5 minutes.  rava toast

Prepare the hung curd for making the stuffing for sandwiches. For this, tie curd in a cloth and hang it on a vessel, keeping the cloth little above from its bottom so that the water drains out to the vessel and you will get thick hung curd ready.

Transfer the hung curd to a big mixing bowl, followed by finely chopped 200 gram cabbage, 1 finely chopped capsicum, 2 grated carrots, 2 tbsp finely chopped green coriander, 1/3 tsp coarsely ground black pepper (freshly ground black pepper give nice taste), ½ inch ginger baton (grated), ½ tsp salt or to taste and mix everything really well. Stuffing is now done and ready, let us now start making the sandwiches.

  • If you want to skip dry mango powder then add lemon juice to the prepared stuffing.

Ingredients
  • Brown bread – 4 slices
  • Potatoes – 3 (medium sized)
  • Frozen peas - ¼ cup
  • Green coriander chutney
  • Butter- 2 tbsp (optional)
  • Green coriander – 2-3 tbsp (finely chopped)
  • Ginger paste – 1 tsp
  • Green chilly – 1 (finely chopped)
  • Dry mango powder - ¼ tsp
  • Salt – more than ¼ tsp or to taste
  • Cumin seeds - ¼ tsp
Instructions
  1. Mash the boiled potatoes.
  2. Roast the cumin seeds and add butter, ginger paste, green chilly, salt, dry mango powder and green peas to the pan. Cook the green peas for 2-3 minutes on low flame.
  3. Add mashed potatoes and green coriander to it. Mix and mash everything together. Stuffing is ready.
  4. Take a bread slice and apply butter on it. Place 1 tsp of green coriander chutney and stuffing on it. Apply some butter and chutney on another bread slice and place it on the top of stuffing.
  5. Place the stuffed sandwiches on the sandwich maker. Roast it for 3 minutes. Transfer them on a plate.
