Aloo shimla mirch is a simple yet delectable recipe prepared with potatoes and capsicum and sauteed with Indian desi spices. This recipe of potato and capsicum is prepared with very less ingredients and cooks instantly. In this recipe the potatoes and green capsicums are sautéed with some desi spices. This Aloo shimla mirch is a no onion and no garlic recipe. Everybody at your home will be so fond of this dish that you’ll often include it in our meals.

We have used green capsicums with potatoes but you can make variation to this regular sabzi with using some yellow and red capsicums as well. It tastes the best when served steaming hot with parantha, naan, chapatti or poori. In fact, you can serve it as a side dish with dal-rice combination as well. Directions

Getting ready:

1.  Now wash the potatoes too. Peel the potatoes and chop each potato in 8 chunks.

2. Wash the capsicum as well and remove the stalk and seeds from it. Chop the capsicum into big chunks.

3. Rinse the green chilies thoroughly and chop them finely.

4. Rinse the ginger well, peel and slice down thinly.

5. Finely chop the green coriander and tomatoes as well.

6. Heat some oil in a pan and splutter cumin seeds first.

7. Then add asafoetida, turmeric powder, coriander powder and finely chopped green chilly. Saute the spices for a while.

8. Add the potatoes to wok and stir well. Cover and let the potatoes cook through for 5 minutes on low flame.

9. After 5 minutes, check and stir the potatoes. If needed, add 1 to 2 tbsp water. 10. Cover again and let them cook for 2 to 3 more minutes.

11. Now add capsicum, salt, red chilly powder and finely chopped ginger to the wok. Mix everything really well.

12. Cover again and cook for 3 to 4 minutes. Stir and check the sabzi at regular intervals.

13. When the potatoes get tender, add chopped tomatoes and some green coriander to it. Mix well.

14. Cover the wok again and let the sabzi simmer on low flame for 1 to 2 minutes.

15. Aloo shimla mirch sabzi is now ready, turn off the flame. Transfer the sabzi to a serving bowl or tray.
