Nutri Idli is a delicious breakfast recipe prepared with ground nutrela chunks, semolina, and vegetables. This delicious recipe can be served as breakfast or packed for kids tiffin. Served the idlis along with green coriander or coconut chutney to double the deliciousness.

Directions:

1. Boil 2 cups of water in a cooking vessel.

2. Add 1/2 cup of soya chunks to water and leave them for 15 minutes.

3. Mix 1 cup suji, 1 cup curd, 1/4 cup of chopped carrots, 1/4 cup green peas, 2-chopped green chilis, 1/2 inch grated ginger, 1 tbsp of green coriander, and 1 tsp of salt in a bowl.

4. Pour water gradually and prepare a little thick batter. Cover and keep it aside for 10-15 minutes.

5. Transfer the soya chunks to a strainer and squeeze to drain out water.

6. Add the soya chunks to the mixture and grind coarsely.

7. Mix ground soya chunks into the sooji batter and prepare a little thick batter.

8. Mix 1.25 tsp of Eno Fruit salt in the Idli batter and add the batter to idli molds.

9. Steam the idlis for 10-12 minutes over medium-high heat.

10. Scrape out the Idlis using the unsharp side of the knife.

11. Heat 1 tbsp of oil in the Kadai.

12. Roast 1/2 tsp of mustard seeds, then 10-12 curry leaves and turn off the flame.

13. Add Tadka and grated coconut to the Idlis.

14. Nutri Idlis are ready to be served.

  • Curd - 1 cup
  • Peas - ¼ cup
  • Green coriander - 1 tbsp
  • Green Chilli (finely chopped) - 2
  • Ginger (grated) - ½ inch
  • Oil - 1 to 2 tbsp
  • Carrot - ¼ cup
  • Coconut (grated) - 1 to 2 tbsp
  • Curry leaves - 10 to 12
  • Mustard seeds - ½ tsp
  • Eno Fruit Salt - 1 tsp
  • Salt - 1 tsp
