Leftover Rice Paratha Recipe

When you have leftover rice, fry and stuff them inside paratha. Yes, you can prepare tasty and crispy parathas from leftover rice. They are not only easy to prepare but are amazingly delicious too. Prepare rice paratha and serve hot with curd, raita, chutney, or pickle.

Follow the directions along with images to prepare Khasta-Karare Chawal/rice parathe.

Directions:

1. Mix 2 cups of wheat flour, 1/2 tsp of salt, 1 tsp of oil in a bowl.

2. Add lukewarm water gradually and knead a soft dough. Cover and leave the dough for 20 minutes.

3. Heat 2 tsp of oil in the pan.

4. Roast 1/2 tsp of cumin seeds in the hot oil.

5. Add 1/2 inch minced ginger, 1-chopped green chili, 1/4 tsp of turmeric powder, and 1/2 tsp of coriander powder to the pan.

6. Mix 1 cup of leftover rice, 1/4 tsp of red chili powder, 1/4 tsp of dry mango powder, 1/8 tsp of garam masala, and 1/3 tsp of salt in the pan.

7. Add 1 tbsp of water, 1-2 tbsp of green coriander to the rice, and cook the rice for a minute or two.

8. Take it out on a plate and allow it to cool.

9. Apply a little oil to your hand and knead the dough a little after 20 minutes.

10. Take-out a dough portion, dust in dry flour, and roll out a small sheet of 3-4 inches in diameter.

11. Spread ghee over the sheet and add 2-3 spoons of stuffing.

12. Collect the corners of the sheet and cover the stuffing.

13. Wrap the dough in dry flour and roll out a medium-sized paratha.

14. Spread ghee on the pan and add paratha.

15. Flip the paratha around once dark from above.

16. Roast the other side till brown spots appear and apply ghee to the paratha.

17. Flip again, apply oil, and roast the paratha till brown spots appear on both sides.

18. Rice parathas ready to be served.

  • Wheat Flour - 2 Cup (300 grams)
  • Salt - ½ tsp
  • Oil - 1 tsp
  • Oil - 2 tsp
  • Cumin Seeds - ½ tsp

  • Green Chilli - 1, finely chopped
  • Turmeric Powder - ¼ tsp
  • Coriander Powder - ½ tsp

  • Red Chilli - ¼ tsp, coarsely ground
  • Dry Mango Powder - ¼ tsp
  • Garam Masala - ⅛ tsp
  • Salt - ⅓ tsp
  • Coriander Leaves - 1-2 tbsp
