Directions:
1. Take 2 cups maida, add ½ tsp of salt, ½ tsp of carom seeds, 4 tbsp of ghee, and mix well.
2. Add lukewarm water gradually to the Maida and knead a stiff dough.
3. Cover and leave the dough for 20 minutes
4. Heat 1 tbsp of oil in the pan.
5. Add ½ tsp of grated ginger, 2-finely chopped green chilies, 1 tsp of coriander powder, and roast them briefly.
6. Add 4-boiled and crumbled potatoes to the pan.
7. Mix ½ tsp of cumin powder, ¾ tsp of red chili powder, ½ tsp of dry mango powder, ¼ tsp of garam masala, and ½ tsp of salt to the potatoes.
8. Add 2 tsp of green coriander to the stuffing and mix well.
9. Divide the dough into small lumps.
10. Roll the dough into a sheet of about 3.5 to 4-inch in diameter.
11. Place the sheet on your palm and add stuffing to the center.
12. Start pleating and shape it like modak.
13. Join all the pleats in the center and pinch it at the top.
14. Heat the oil in the Kadai for frying.
15. Drop the Modak in the Kadai and fry them till golden brown.
16. Once golden brown, take them out on a plate.
17. Garma-Garam Modak Samosas are ready to be served.
