Green papaya curry is a one-pot dish prepared with raw papaya/papita. The preparation requires must-have ingredients. Sauté papaya pieces, cook in the tomato puree along with Indian spices, and delicious green papaya curry is ready to serve. Directions:
1. Take 600 grams of raw papaya, discard the stem, and cut it into halves.
2. Scoop out the seeds, cut the papaya lengthways into long pieces, and discard the green cover.
3. Chop the papaya into small-sized long and thin pieces.
4. Heat 2-3 tbsp of oil in the pan.
5. Sauté chopped papayas pieces from all sides until they turn soft and brown.
6. Add ½ tsp cumin seeds, ½ tsp turmeric powder, 1 tsp coriander powder to the pan, and roast the masala.
7. Prepare a purée of 2-tomatoes, 2-chilies, ½ inch ginger baton, and add it to the pan.
8. Add 1 tsp of red chili powder and fry the masala until the oil separates.
9. Add ½ cup water, papaya pieces, ¾ tsp of salt, ¼ tsp of garam masala, and mix well.
10. Cover the pan and simmer the sabzi for 5 minutes over medium heat.
11. Transfer the sabzi to the serving bowl and garnish with green coriander leaves.
