Kormola is a sweet and crispy snack prepared especially during Christmas in Goa. Kormolas are hand-shaped flower buds made with sweetened and flavored refined flour (aka maida), kneaded into a dough using milk. It is a tradition to prepare them every Christmas and share them with family, friends, and neighbors.
So, follow the directions below along with the images and prepare sweet and crispy kormola.
Directions:
1. Take 1 cup maida and mix 4-coarsely ground cardamom, 1/4 cup of sugar powder, 1/2 tsp of baking powder, 1 tbsp of ghee in it.
2. Add 1/4 cup lukewarm milk gradually and knead a soft dough.
3. Add 1 tsp of ghee to the dough and knead to make it soft.
4. Cover the dough and keep aside for 20 minutes to set.
5. Knead the dough again after 20 minutes and divide it into 3-equal portions.
6. Take a portion of dough and roll it into a big thin sheet.
7. Cut circles from the sheet using a cookie cutter.
8. Bind the extra dough and use it to prepare another batch.
9. Pick a circle and roll it a little more.
10. Fold the circle and give it a Kormola shape.
11. Heat the oil in the Kadai for frying. We need medium hot oil for frying.
12. Fry the kormolas over low-medium heat for 1-2 minutes without stirring.
13. Once fried from below, stir them occasionally and fry till golden brown.
14. Take the kormolas out on a plate and fry other batches similarly. Each set will take 10 minutes to fry up.
