Spinach kofta or Palak kofta curry is a super delicious and scrumptious main course dish where soft spinach-gram flour dumplings or koftas are simmered in tomato-cream based gravy. Spinach is a very nutritious and healthy veggie but kids run away from it. Getting ready:

Select the fresh and green leaves remove the stalk and rinse them thoroughly. Place them in sieve to dry. Then chop them in finely.

Take gram flour in a big bowl and add water in small portions. Stir until all the lumps dissolve and you get smooth and thick batter.

To it add finely chopped ginger, finely chopped green chilly, ¼ tsp red chilly powder and ½ tsp salt and mix everything well. Add chopped spinach.Mix everything really well. 1/3 cup of water is used to make this batter.

Mixture for making koftas is ready.

Heat some oil in a wok or pan. Take small amount of mixture and roll into a kofta shape. Then gently slide the kofta ball into the oil. Add as much balls as possible and fry until they turn golden brown and crispy.

Drain out the fried koftas on paper kitchen towels to remove excess. Spinach koftas are now ready.

Heat 2 tbsp oil in the same wok and add cumin seeds first. Then add asafoetida, turmeric powder, coriander powder and saute for a while. Now add tomato-ginger-green chilly paste, red chilly powder and saute the masala on low flame until you see oil leaving the sides of masala.

Add cream and keep stirring till the masala come to a gentle boil.

Now add 1-2 cups of water to the masala and let simmer on low flame until it boils again. Keep stirring constantly. To it add garam masala, salt and some chopped green coriander. Mix well. Gravy is now ready.

Drop the fried koftas in the gravy, mix gently. Cover the pan and cook the sabzi on low flame for 2 minutes.

Transfer to a serving bowl. Spinach kofta curry is now ready.
