Karela Tomato Receipe recipes – Bitter Gourd with Tomato Recipe

Directions
Getting ready:
- Rinse the gourds thoroughly and place it on a colander to dry.
2. Cut off the stalk and chop them in roundels. Keep the chunks thin.
3. Wash the tomatoes and dice them in small chunks.
Making:
4. Heat some oil in a pan or wok. Splutter cumin seeds then add asafoetida, turmeric powder, coriander powder and saute for few minutes.
5. Then add the gourds, followed by salt and mix it really well.
6. Now put the lid on and let the gourds cook on low flame until soft and tender. It will take 3-4 minutes to cook them. Keep checking occasionally.
7. Uncover the pan and stir the gourd. Cover it back and let it cook for another 3-4 minutes.
8. Remove the lid and add diced tomatoes, fennel powder, red chilly powder and green coriander in the sabzi. Give it a stir.
9. Let it simmer for 2 more minutes. Keep stirring at regular intervals and cook till the tomatoes are cooked through. Scrumptious tomato karela sabzi is now ready to attack.
Serving:
10. Serve these super duper yummy and delicious bitter gourds with tomatoes garnished with some coriander sprigs with any Indian bread like chapatti, paranthas, naan and relish eating.

- Bitter gourd – 5 (200 grams)
- Tomato – 2 (100 grams)
- Oil – 3 to 4 tbsp
- Green coriander – 2 tbsp (finely chopped)
- Asafoetida – 1 pinch
- Cumin seeds – ½ tsp
- Turmeric powder – ¼ tsp
- Red chilly powder – ¼ tsp
- Coriander powder – 2 tbsp
- Fennel powder – 2 tbsp
- Salt – 1 tsp or as per taste
