Masala urad dal is prepared with freshly ground spices and tastes really scrumptious and super delectable. Making lentils or dal has always been a saver for me, when it comes to time and efforts. When you are in no mood of cooking too lavish dishes or looking for some simple meals then making dal is a good option for you. I often include dals in my meals, especially dinners.

Dinners at my home are incomplete without the dal. So, today I have an easy to make masala urad recipe for you all. Try to follow this recipe for making Masala urad dal recipe at your home with these easy to follow step-by-step instructions and I am sure everyone will relish eating it for sure. After this, wash the tomato and green chilly and grind them to make a fine paste.

Also, peel the brown cardamom and coarsely ground its seed along with black peppercorns and cloves.

Heat 1-2 tbsp of ghee in a pressure cooker. Splutter cumin seeds in the ghee. Now add asafoetida, coarsely ground spices, turmeric powder, coriander powder and curry leaves and saute well until fragrant. Add tomato-green chilly paste, ginger paste and finely chopped ginger to the spice mixture and saute until you see ghee leaving the edges of masala.

Once the ghee starts leaving the edghes of the masala, add urad dal and mix it really well. Stir fry the urad dal with the masala for a minute or so.

Then add 2 cups of water and salt. Close the pressure cooker with lid and pressure cook the dal till it releases a whistle. After this reduce the flame and let it simmer for 2 more minutes on low flame. Turn off the flame.

Now let the steam escape on its own and then open the lid. Dal is almost done, add garam masala and finely chopped coriander to it. Mix it well.

Transfer urad dal to a bowl. To enhance the taste of dal you can add another tempering to it. For this heat 2 tsp ghee in a small pan and add 1/4 tsp of cumin seeds and whole dry red chilies into it. Stir for a while and pour this tempering over the dal.

Garnish this delectable and scrumptious urad dal with some green coriander sprigs and serve it steaming hot along with chapatti, parantha, naan or rice.

Ingredients
  • Urad dal – ½ cup (100 grams)
  • Tomato – 1
  • Green chilly – 1
  • Ginger paste – ½ tsp
  • Ginger – ½ inch piece (finely chopped)
  • Green coriander – 2 to 3 tbsp (finely chopped)
  • Curry leaves – 8 to 10
  • Cumin seeds – ½ tsp
  • Asafoetida – 1 pinch
  • Cumin seeds – ½ tsp
  • Turmeric powder – ½ tsp
  • Coriander powder – 1 tsp
  • Garam masala –less than ¼ tsp
  • Red chilly powder – ¼ tsp
  • Whole dry red chilies – 2
  • Cinnamon stick – 1
  • Brown cardamom – 1
  • Cloves – 2
  • Black pepper – 10
  • Ghee – 2 to 3 tbsp
Instructions
  1. Grind the tomatoes and green chilly to make a fine paste. Also, peel the brown cardamom and coarsely ground its seed along with black peppercorns and cloves.
  2. Heat 1-2 tbsp of ghee in a pressure cooker. Splutter cumin seeds and add asafetida, coarsely ground spices, turmeric powder, coriander powder, curry leaves, tomato-green chilly paste, ginger paste, chopped ginger, urad dal, 2 cups of water and salt. Saute for a while.
  3. Close the cooker and cook the dal till it releases a whistle. After this reduce the flame and let it simmer for 2 more minutes on low flame. Now let the steam escape on its own. Dal is almost done, add garam masala and finely chopped coriander to it. Mix it well.
  4. For tempering, heat 2 tsp ghee in a small pan and add ¼ tsp of cumin seeds and whole dry red chilies into it. Pour this tempering over the dal.
  5. Garnish this delectable urad dal with some green coriander sprigs and serve hot with chapatti, parantha, naan or rice.
