Directions

Getting ready:

1. Sieve refined flour in a bowl.

2. Grate the mozzarella cheese.

3. Take a big mixing bowl and add refined flour, 1/2 tsp salt, 1 pinch baking soda, ¼ tsp carom seeds, and ¼ cup oil. Mix all ingredients really well.

4. Add water in small parts and knead firm and stiff dough (don’t knead the dough too much, just bind it well).

5. Cover the dough and keep aside for 20 minutes to set. Meanwhile, let us prepare the stuffing.

6. For stuffing, heat 1 tsp oil in a wok and add finely chopped green chilly and ginger paste. Saute for a while.

7. Then add finely minced capsicum, salt, 1 tsp mango powder and cook on low flame.

8. Add grated paneer, red chilly powder and mix everything really well.

9. Stuffing is now ready, turn off the flame and transfer the stuffing in a plate.

10. Mix some green coriander to the stuffing as well.

11. Mix mozzarella cheese to the stuffing when it cools down completely. Stuffing for making kachori is ready.

12. Dough is also ready, now pinch a small lump from the dough.

14. Flatten it to give a bowl shape with the help of your fingers.

15. Place 1 to 2 tsp stuffing over the dough.

16. Close it really well. Roll it into a kachori.

17. We have stuffed the kachori. Now place it on a plate. Likewise prepare rest of the kachoris as well.

18. Heat enough oil in a wok for deep frying the kachoris.

19. Roll out the kachori very gently.

20. Slide them in medium hot oil for deep frying. Place 3 to 4 or as many kachoris as possible in the oil.

21. When the kachoris puff up and float on the surface, turn the sides and fry until they get golden brown in color from all sides, evenly.

22. Drain out the fried kachoris on a plate with absorbent paper (it takes 8 to 10 minutes for frying kachoris at a time) to remove the excess oil. Fry all the kachoris, similarly. Steaming hot and mouth watering cheese kachori is ready.

23. Serve these tempting kachoris with side accompaniment of tomato chutney, green coriander chutney or tomato sauce and relish eating.

Suggestions:

  • Make sure you add cheese only when the stuffing cools down completely.
  • Do close the stuffing really well so that stuffing doesn’t spill out while frying.
  • Roll out the kachoris very gently, keeping it thick.
  • For 10 to 12 kachoris
