Getting Ready :
Add a tsp of instant dry active yeast to 2 cups of refined flour in a bowl.
Add a tsp of sugar and a ½ tsp of salt to it.
Add some lukewarm water and knead the soft dough while applying some oil on your palms.
After kneading the dough, cover and keep it in a warm place to set for 1 to 1.5 hours.
The dough has expanded twice to its original size within an hour.
Punch and mash the dough after applying some dry flour on your palms.
Divide the dough into the dough lumps as per your desired sizes.
Coat it with the dry flour, cover and keep them aside for a while.
Preheat a pan on low flame and flatten the dough lump into oval-shaped Kulcha using a rolling pin.
Sprinkle some dry fenugreek over it and flatten it.
Spread a round shaped butter paper over the pan and grease it with some oil.
Place the Kulcha over it to cook and cook while covering it for 2 minutes on low flame.
Flatten the rest of dough lumps likewise and after 2 minutes, flip the first Kulcha.
The Kulcha has semi-cooked and it is ready to be cooked for serving.
Serving
Preheat a pan, grease it with some clarified butter and place the Kulcha over it on medium flame.
Cook the Kulcha while flipping it until it becomes brown from both sides.
After cooking Kulcha, serve it along with Chole curry or nutri curry.
Suggestions
You can use silicon or a regular sheet of paper instead of butter paper.
The dough might take 2 to 2.5 hours for fermenting if the season is of winters.

- Oil - 1 tbsp
- Instant dry active yeast - 1 tsp

- Dry fenugreek leaves - 1 tsp
