Annakoot is specially made on a day after Diwali to celebrate the occasion of Govardhan puja. It is served as a prasad with poori. During this time some veggies like cauliflower, cabbage, sengri, sem etc.
For Making Annakoot you can take little bits of all veggies and make delicious Annakoot. In UP this Annakoot is mostly made in all households and in temples too. Here is an easy recipe with step by step pictures to make Annakoot.
Take veggies such as french beans,taro roots,radish leaves,radish,carrot,ridged gourd,pointed gourd,broad beans,capsicum,cauliflower floret, bottle gourd, bunch of spinach leaves,cluster beans, bitter gourd,pumpkin , cabbage, radish pod, round gourd,okra, potato, eggplant,raw banana, tomatoes.
Wash and pat dry all veggies then chop them.
Cut eggplant, raw banana and potato. Keep in water in bowl.
Heat a pan for making Annakoot sabzi, add 2 tbsp oil to the pan,heat oil. When rightly hot, add 1 tsp cumin, 1 pinch asafoetida,1 tsp cumin, 1 pinch asafoetida,1 tsp turmeric powder, add half green chili, keep half for later, 1 tsp coriander powder, 1 tsp ginger paste, slightly roast the masala, Keep flame low.
Add chopped veggies to the pan, mix a little so that spices do not burn. Roast for 2 to 3 minutes.
Add 1 tsp salt too,1/2 tsp red chili powder, add 1/2 cup water.Cover and cook it on medium flame for 5 to 6 minutes.Then check sabzi.
Chop tomatoes. To prepare tomato masala for the veggies,heat a pan, add 3 to 4 tbsp oil.Heat it, add cumin seeds, turmeric powder,ginger paste, green chili.Roast them. Keep flame low.
Add chopped tomatoes, red chili powder, add salt too.Roast the masala well till tomatoes are mashed and till oil is separated from the masala.Keep checking veggies at regular interval.
Sabzi seems dry add 1/4 cup water and cover again cook for 5 to 6 minutes then check it.
Veggies are cooked and ready, took 30 minutes for it to cook, masala are roasted,mix the masala to the sabzi.Turn off flame of the masala.Mix the masala in the sabzi.
Add garam masala at the end, add green coriander too. Mix all. Add 1/4 cup water, Increase flame.Mix the sabzi and veggies.Cover and cook veggies on low flame for 2 to 3 minutes.
Take out sabzi in a bowl, turn off flame.Garnish the sabzi with some green coriander. Annakoot sabzi is served with poori.This quantity of sabzi is sufficient for 8 to 10 members of family.
