    Baigan Bharta is one of the favorite North Indian cuisine. Even those who don’t like it will relish eating Baigan Bharta for sure. You can make this delicious dish in very less time with ingredients like Brinjal, tomatoes,  spices and green coriander.

    Here is an easy recipe with step by step pictures to make this amazing side dish. Serve this delicious and lip-smacking baingan bharta steaming hot along with chapatti, parantha, naan or rice. Enjoy!

    Getting ready:

    Take a brinjal and make 3-4 cuts on it. It is done so that the brinjal doesn’t blast while baking in the oven/microwave. Place it inside the microwave and roast it for 5 minutes. After 5 minutes, check the brinjal. It is not roasted yet, put it back inside the microwave and roast it for 2 minutes more.

    Take another brinjal and make 3-4 cuts on it. Place it on flame, keep rotating the brinjal and roast it until it turns tender. Press it at regular interval to check whether it’s cooked through or not.

    When it is easily pressed, turn off the flame and place it in a bowl. It took 6 minutes to roast the brinjal on flame. Take out the brinjal from the microwave, it is roasted aptly as well. Now peel both the brinjals and cut off their stalk as well. Keep them in a bowl.

    Roughly chop the brinjals with the help of a knife. Keep it aside, brinjals for bharta is now ready.

    Place a pan on flame and pour 2 tbsp of oil into it. When the oil gets heated, add cumin seeds and asafoetida into it. After sauteing cumin seeds, add turmeric powder, coriander powder, ginger and green chilies into it. Saute the masala for a while.

    Then add tomatoes, salt and red chilly powder into it. Mix everything really well, cover the pan and cook the tomatoes for 2-3 minutes.

    2-3 minutes are over, tomatoes are cooked aptly. Saute the masala for 1-2 minutes more then add the chopped brinjals and garam masala into it. Mix everything really well, keep stirring constantly and cook it for 2-3 minutes. Cover the pan and cook it for 2 minutes on low flame so that the brinjals absorbs the masala really well.

    After 2 minutes, remove the lid. Bharta is now cooked aptly, add green coriander into it and mix it really well. Baingan bharta is now ready to serve, turn off the flame.

    • Brinjals – 500 grams (2 big)
    • Cumin seeds - ½ tsp
    • Asafoetida – 1-2 pinches
    • Turmeric powder - ¼ tsp
    • Coriander powder – 1 tsp
    • Red chilly powder – less than ¼ tsp
    • Salt - ½ tsp or to taste
    • Ginger baton – 1 inch (grated)
    • Green chilies – 1-2 (finely chopped)
    • Garam masala – less than ¼ tsp
    • Oil – 2-3 tbsp
    • Green coriander – 1-2 tbsp (finely chopped)
    • Tomatoes – 2 (finely chopped)
