How to make tagar or Boora for ladu and Peda

Tagar and Boora are forms of sugar. It is prepared by melting sugar in water and later stirring it while it cools down. It can be used to make ladoos and pedas as desired. It adds more taste to the sweets prepared with it. You can now prepare it easily at home rather than buying it from the market.

Here is an easy step by step recipe with pictures. You can prepare Tagar and Boora and easily make sweets for any special or festive occasion.

Making:
Take sugar and 1 cup of water in a pan and put it to flame. Let the sugar completely dissolve in water. Stir the sugar syrup at regular intervals. Cook the sugar syrup for 2 to 3 minutes. Stir the sugar syrup so that it doesn’t spill outside the pan.

Boora recipe
Pour a drop of sugar syrup in a bowl. Let it cool for a few seconds and then check if it is thick enough. Cook the sugar syrup for a few minutes to get the right density. Pour some ghee in sugar syrup so that the tagar do not form lumps.

Check if the sugar syrup is thick enough. After pouring the sugar to dissolve it takes about 6 to 7 minutes to cook the sugar syrup to the exact density. Switch off the gas stove and constantly stir the sugar syrup so that it doesn’t stick and form lumps. Stir and cool the sugar syrup. As it cools it will slowly become more grainy in texture. Tagar is now ready.

Suggestion

  • Add 2 tbsp of milk to remove any impurities from the sugar syrup. When milk is added to the sugar syrup, it forms a foam along with the impurities and stick to the side of the pan.These impurities can be removed with a spoon.
