Getting ready:

Remove the stalk of cauliflower and cut it into florets. Discard the hard part of stem and rinse the cauliflower florets thoroughly with water. Place them on the sieve to drain excess water from it.Cauliflower peas masala
Wash the tomatoes and green chilies thoroughly with water, allow them to dry out completely. Now roughly chop the tomatoes, green chillies, ginger and cashews and add it to a mixer jar. Put the lid on and grind everything into fine paste. Transfer it into a bowl.

Place a pan on flame and put green peas and cauliflower florets into it along with a cup of water. Cover the pan and cook the veggies for 5 minutes. Check later.

Meanwhile, prepare the masala. For this, place a pan on flame and pour the oil into it. When the oil gets heated, add cumin seeds, asafoetida, turmeric powder, dry fenugreek leaves, coriander powder, tomato-ginger-cashew-green chilly paste and red chilly powder into it. Mix everything really well and saute the masala until the oil starts separating from its edges.

5 minutes are over, remove the lid and check the veggies. Veggies have cooked aptly, don’t overcook them. Add half the quantity of salt into it and mix it thoroughly. Turn off the flame.

Add the remaining salt into the masala and mix it really well. Masala is now roasted aptly, add the boiled veggies into it along with its water. Mix it really well.

Add garam masala and green coriander into the sabzi. Mix them really well, cover the pan and cook the sabzi for 2-3 minutes on low flame so that the veggies absorb the masala really well.

After 3 minutes, remove the lid. Gobhi matar masala is now ready, turn off the flame and transfer it to a bowl.

Suggestion

You can replace cashews with 2 tbsp sesame seeds, soaked 2 tbsp of poppy seeds for half an hour, coconut, peanuts or anything else you like.

Ingredients
  • Cauliflower – 400 grams
  • Frozen/fresh green peas – 1 cup
  • Tomatoes – 3
  • Green chilies – 2
  • Ginger baton – 1 inch
  • Cashews – 10-12
  • Green coriander – 2-3 tbsp (finely chopped)
  • Cumin seeds - ½ tsp
  • Asafoetida – 1-2 pinches
  • Turmeric powder – ¼ tsp
  • Coriander powder – 1 tsp
  • Oil – 2 tbsp
  • Garam masala - ¼ tsp
  • Red chilly powder - ¼ tsp
  • Salt – 1 tsp or to taste
  • Dry fenugreek leaves – 1 tbsp
Instructions
