Lobia Vada Recipe | Black Eyed Beans Fritters Recipe

Lobia vada makes up a perfect snack for a fun evening. Crispy on the outside and soft on the inside these  Black eyed beans fritters can be relished steaming with a warm cup of tea. It can be served to guests or munched on anytime. These delicious vadas can be made anytime using ingredients like lobia beans, spinach, green coriander and a mix of Indian spices. These fritters made of black eyed beans are savored by all.

Here is an easy recipe with step- by- step pictures to make these deep fried Lobia vada.  Serve these mouth-drooling and crispy lobia vadas steaming hot along with the side assortment of tomato sauce or green coriander chutney. Enjoy!

Getting ready:

Wash the lobia beans thoroughly with water. After that, soak them for 8-10 hours then drain out the excess water from them. Put the soaked lobia beans in a mixer jar followed by some water. Use enough water as required for grinding the beans. Put the lid on and grind them into slightly coarse paste then transfer it to a big bowl.Black eyed beans frittersMaking:
Now add coriander powder, salt, red chilly powder, ginger, green chilies, green coriander, spinach and asafoetida into the lobia beans paste. Mix all the ingredients really well. Mixture for making vada is now ready.Black eyed beans fritters

Grease the hands with some oil and take 2 tsp of mixture. Make a round ball of it and then flatten it slightly to shape it as a vada.Black eyed beans fritters

Place a wok on flame and pour enough oil into it to deep fry the vadas. When the oil gets heated, gently drop the vada into it. Likewise, make the vadas and drop them into the oil.Black eyed beans fritters
Once the vadas are fried from beneath, flip their sides and fry them until they get golden brown from all the sides. Vadas have turned golden brown, drain out them on plate covered with kitchen paper towel. Fry the rest of the vadas as well. Lobia vadas are now ready to serve.Black eyed beans frittersServing:
