    Kulcha is one of the popular Indian bread from the Northern cuisine which makes a perfect combo with tangy-zingy dried peas. Kulcha is a very soft and easy to prepare Indian flat bread. You can prepared these soft kulchas in tandoor or in oven. Today’s recipe is for baking the kulcha in tandoor.

    Out of other Indian flat breads prepared in tandoor, plain kulcha is the most popular and favorite among all after butter naan. This recipe with step-by-step pictures will help you make perfect kulchas at your home. You can served these super delectable kulchas with steaming hot, amritsari chole or Punjabi chole or dry white peas.

    Getting ready:

    Sieve refined flour in a bowl.

    Add curd, baking soda, sugar, salt and 2 tsp of oil into the sieved refined flour. Mix everything really well until the sugar granules dissolves completely into the curd. Now knead the dough by adding lukewarm water in small portions. For this much of flour less than ½ cup of water is required. Grease the palm with some oil and keep kneading the dough for 6-7 minutes until the dough turns smooth and soft. Cover and keep the dough aside for 3 to 4 hours to ferment in summers or else it takes 12 to 14 hours to ferment in winters.

    After 3-4 hours, punch the dough again and pinch small amount of dough. Dust it with some flour and roll it into a round ball. Place it on a plate. Similarly, prepare the rest of the dough balls until the dough is utilized completely.

    Take a dough ball and dust it with some dry flour. Roll it in an oval shape kulcha with a rolling pin, keeping it little thick. Apply some oil on one side and water on another side. Sprinkle some chopped green coriander and press them downwards very gently.

    Grease a tandoor tray with some oil. Place the 2 rolled kulchas on the tray and place the tray back into the tandoor and bake the kulchas. Once it is baked from beneath, flip its side and put the tray back into the tandoor.

    Kulchas are now baked completely, transfer it to a plate.

    Similarly roll the kulcha in an oval shape. Apply some water on a side and sprinkle some chopped green coriander on it and press them downwards gently. Place it on the tawa keeping the coriander side above.

    Once it is cooked from beneath flip the side and then continue cooking until the kulchas puffs up and turns brown in color.

    Ingredients
