Serve this preparation of arbi steaming hot with chapatti, parantha or pooris and relish eating. Achari arbi is a different and simple way to cook arbi.     Getting ready:

    Take a boiled arbi and peel off its skin. Place it in a bowl and similarly peel the rest of the arbi as well. Cut each arbi longitudinally into 2 pieces and place them in separate bowl.achari arbi recipeMaking:

    Place a pan on flame and pour oil into it. When the oil gets heated, add cumin seeds, red mustard seeds, fenugreek seeds, kalonji, carom seeds and asafoetida into it. After sauteing the spices, add ginger, turmeric powder, coriander powder, green chilies and fennel powder into it. Saute the spices for a while.achari arbi recipe

    Add chopped arbi into it followed by salt, dry mango powder, red chilly powder, garam masala and green coriander. Mix everything really well, keep stirring constantly and fry the arbi for 3-4 minutes until they get nicely coated with the masala.

    After 3-4 minutes, everything will be mixed nicely. Achari arbi is now ready to serve, turn off the flame and transfer it to a bowl.

    • Arbi – 250 grams (10-12) (boiled)
    • Mustard oil – 2-3 tbsp
    • Green coriander – 2-3 tbsp (finely chopped)
    • Green chilies – 4 (slit)
    • Coriander powder - ½ tsp
    • Fennel powder - ½ tsp
    • Dry mango powder - ¼ tsp
    • Turmeric powder - ¼ tsp
    • Red chilly powder - ¼ tsp
    • Garam masala – less than ¼ tsp
    • Salt - ¾ tsp or to taste
    • Kalonji - ¼ tsp
    • Fenugreek seeds - ¼ tsp
    • Red mustard seeds - ¼ tsp
    • Carom seeds - ¼ tsp

    • Asafoetida – 1-2 pinches
