    Getting ready:

    Wash the turai thoroughly with water and drain out the excess water from it. Allow the gourds to dry out completely. Then, peel off the skin of turai and discard its stalks from both the ends. Chop down the turai into 1.5 to 2 inch long batons.

    Rinse the tomato and green chilly thoroughly with water and allow them to dry out completely. Then roughly chop the tomatoes-chilies and place them directly into a mixer jar to grind them into a fine paste.

    Take a microwave safe bowl and pour the ghee into it. Place it inside the microwave and cook it for 1 minute. After a minute, take out the bowl. Ghee has now melted, to it add cumin powder, turmeric powder, coriander powder, ginger paste, tomato-green chilly paste, red chilly powder and asafoetida. Mix everything really well.

    Place the bowl inside the microwave and cook the masala for 2 minutes. After 2 minutes, take the bowl out. Masala is now roasted aptly, to it add salt and chopped turai  and mix it really well until each turai piece gets nicely coated with the masala.

    Now cover the bowl and place it inside the microwave and cook the sabzi for 3 minutes. After 3 minutes, take the bowl out and stir the sabzi really well. Cover the bowl and again cook the sabzi for 2.5 minutes.

    After 2.5 minutes are over, take the bowl out and check if the turai has now turned tender. Now add chopped green coriander into it and give a nice stir to mix everything really well. Cover the bowl and keep it as it is for 3-4 minutes as standing time. Turai sabzi in microwave is now ready.

    Suggestions

    • If you want to make this sabzi on flame then place a wok on flame and pour some ghee into it. When the ghee melts completely, add asafoetida and cumin seeds into it. Then add the remaining masala and turai into it and cook until it turns tender.
    • If you want to make the sabzi without gravy then don’t cover the bowl while cooking the sabzi.
