    Getting ready:

    Peel the green cardamom and crush its seeds into coarse powder using mortar pestle.

    Place a vessel on flame and pour the milk into it. Let it simmer until it starts boiling. When the milk starts boiling, decrease the flame to medium and cook the milk until it remains half its quantity. Keep stirring it continuously by moving the spatula to the bottom of the vessel to prevent the milk from burning.mishti doi recipe

    Milk has remained half its quantity, turn off the flame and add half amount of sugar into it followed by green cardamom powder. Mix everything really well.mishti doi recipe

    Now take the remaining sugar in a heavy base vessel and place it on flame. Keep stirring it continuously until the sugar gets caramelized.

    After a while, sugar will get caramelized then turn off the flame and add this caramelized sugar into the milk. Mix it thoroughly.

    When everything is mixed well, pour the milk into mud kulhads and bowl. Let it cool down slightly so that it can be touched with bare hand.

    Then add 2 tsp of curd into the milk in each container and mix it properly. Keep the kulhads and bowl in some warm place for 10-12 hours so that they curdle properly. After 10-12 hours, milk will get curdled. Mishti doi is ready to eat.
