There are other versions too which are too time consuming and need extra efforts. But that is not the case in this recipe.

Kulfi is a sweet Indian ice-cream prepared with full cream milk, sugar and some dry fruits and today we have a unique yet super delicious version of kulfi for you all. Eating kulfi is like heaven during summer but you can enjoy it any day too! This kulfi can also be prepared in kulfi molds for kids. So, here is a simplest and easy to follow recipe of making delicious and delightful chikoo kulfi with step-by-step instructions. Enjoy!

Getting ready:

Cut each cashew into 5-6 small pieces. Place them in a bowl. Peel the green cardamom and crush its seeds into coarse powder.

Wash the chikus thoroughly with water, drain out the excess water and allow them to dry out completely. Now take a chiku, peel off its skin using a knife. Discard its seeds and chop it in small chunks, place it in a bowl. Similarly, prepare the rest of the chikus as well.

Further cut half the quantity of chopped chikus into very small chunks and transfer the rest of the chopped chikus in a mixer jar. Put on the lid and prepare fine paste of it.chikoo kulfi recipeMaking:

Take milk in a vessel and put it on flame. Let it simmer until it starts boiling. Once the milk starts boiling, reduce the flame to low and let the milk boil until it remains 1/3 of its actual quantity. Keep stirring at regular interval to prevent the milk from browning at the base.

When the milk turns thick, turn off the flame and add sugar into it and keep the vessel aside so that the milk cools down completely. It took 35-40 minutes to thicken the milk.chikoo kulfi recipe

Milk has cooled down, add vanilla essence, chiku paste, chopped chiku, chopped cashews and green cardamom powder into it. Mix everything really well.chikoo kulfi recipe

Everything is mixed well, transfer this kulfi mixture in an air-tight container. Put the lid on and place it inside the freezer for 6-7 hours to set. After 6 hours, kulfi will get set aptly. Chiku kulfi is ready.
