Getting ready:

Place a butter paper on rolling board and grease it evenly with some ghee.

Place a vessel on flame and pour 2 cups of water or enough water to drench the almonds into it. Let it simmer until the water starts boiling. When the water comes to the boil, add almonds into it, turn off the flame and cover the vessel and keep it aside for 5 minutes.

On the other side, add some milk into the saffron strands so that the saffron releases its colour.

5 minutes are over, almonds have puffed up nicely. Transfer them in a bowl filled with cold water.

Pick an almond and peel off its skin, place it in a bowl. Likewise, peel the rest of the almonds. Transfer the peeled almonds into a bowl filled with hot water, cover the bowl and keep it aside for 1-1.5 hours.

1-1.5 hours are over, almonds have puffed up. Drain the almonds from the water and put them in a mixer jar along with saffron milk and some more milk. Put the lid on and grind everything into fine paste. ½ cup of milk and 2 tbsp of water is used for making this paste. Instead of water you can use milk also.

Now place a pan on flame and pour 2 tsp of ghee into it. When the ghee melts, add almond paste and powdered sugar into it. Keep stirring it constantly and cook the mixture on medium flame until it turns thick in consistency. Move the spatula to the bottom of the pan to prevent the mixture from burning.almond barfi recipe

Mixture has turned thick in consistency. To check, take some mixture in a bowl and let it cool down completely and if it sticks between the fingers that means mixture is ready, turn off the flame and transfer it to a plate. Allow the mixture to cool down.

Grease the hand and take the almond mixture in hand. Roll it into a big peda, place it on the greased butter paper and shape it as a rectangle.

Now grease the rolling pin and roll the mixture evenly into 1/3 cm thick sheet. Keep it aside to set.

When the mixture is set nicely, cut it into barfi pieces with the help of a scale and pizza cutter. You can also use knife instead of pizza cutter.

Transfer the barfi pieces on a plate. Almond barfi is now ready.

Suggestion
