Bharwan Baingan Recipe – Stuffed Eggplant recipe

Stuffed baingan sabzi is an easy and simple way to make this yummy sabzi. Stuffed stir fried veggies always taste great in taste. Many of us don’t often like having brinjals often but if you prepared these brinjals stuffed with some desi spices then everyone just loves them. Stuffed baingan or Stuffed brinjals is a unique exotic dish and is really mouth watering to eat.

Stuffed brinjals are prepared with different ways in different regions with unique and numerous styles of stuffing. Today we are making North Indian style stuffed brinjals and here’s easy to follow step-by-step instructions for you all. Enjoy!

Getting ready:

Wash the brinjals thoroughly with water. Drain out the excess water from it and allow them to dry out completely. Now take a brinjal and remove its stalk. Slit the brinjal making a cross keeping its one end joint. Place it in a bowl. Likewise, cut the remaining brinjals.

Take coriander powder in a plate and add fennel powder, red chilly powder, turmeric powder, grated ginger, chopped green chilly, salt and dry mango powder into it. Mix all the ingredients really well. Filling is now ready.

Take a brinjal and open it widely. Fill it generously with the masala stuffing. Slightly press the brinjal. Place it in a bowl. Likewise, stuff the remaining brinjals with the masala.

Place a wok on flame and pour the mustard oil into it. You can use any other cooking oil. When the oil gets heated, add cumin seeds into it. As the cumin seeds splutters, add asafoetida into it. Now place the stuffed brinjals into it arranging them in single layer. Sprinkle the leftover masala as well. Cover and cook the brinjals for 4-5 minutes on low flame. Check later.

After 5 minutes, remove the lid. Brinjals are roasted from beneath. Now carefully flip their sides. Again cover the wok and cook the brinjals for 5 more minutes on low flame. After 5 minutes, flip the brinjals to its uncooked side. Then cover and cook the brinjals for 3 minutes more.

3 minutes are over. Remove the lid. Press the brinjal with the spatula. They are now cooked aptly. Turn off the flame. Transfer them on a serving plate. Stuffed brinjals are now ready.

Garnish this scrumptious and finger-licking stuffed brinjals with some green coriander sprigs and serve them steaming hot along with chapatti, parantha or rice. Enjoy!

  • Mustard oil – 3-4 tbsp

  • Ginger baton – 1 inch (grated)
  • Salt – 1 tsp or to taste
  • Dry mango powder - ½ tsp
