    Getting ready:

    Take the paneer and cut it into 1 inch square chunks. Place it in a bowl.

    Pluck the spinach leaves and discard its stalk. Wash the leaves twice in water. Drain out excess water. Place the spinach leaves on the colander and allow them to dry out completely. After that, make a bunch of it and chop it finely. Similarly, chop the fenugreek leaves as well. Place them in separate bowls.

    Place a pan on flame and pour 2 tbsp oil into it. When the oil gets heated, add paneer chunks into it. Shallow fry the paneer chunks until they turn golden brown in colour from all the sides. Keep the flame on low. Once they are fried aptly, transfer them into a bowl.

    Pour 1 tbsp more oil into the pan. Add cumin seeds, asafoetida and chopped green chillies into it. Keep the flame on low so that the spices doesn’t get burnt. Now add turmeric powder, coriander powder and chopped tomato. Saute the masala for a while.

    Now add chopped fenugreek leaves, chopped spinach leaves, salt, red chilly powder, sugar into the masala. Mix everything really well. Cover the pan and let the veggies cook for 5 minutes on medium flame.

    After 5 minutes, remove the lid. Add paneer chunks into the veggies and mix it really well. Again cover the pan and cook the veggies for 2-3 minutes more on low flame.

    3 minutes are over. Take off the lid. Sabzi is now ready. Stir the sabzi. Turn off the flame and transfer it to a serving bowl. Palak methi paneer fry is now ready to serve.
