Potato stuffed sandwich is prepared by grilling the bread slices stuffed with potato filling. Sandwich is an all time favorite snack. You can serve it as breakfast or have it as an evening snack. Kids relish this snack the most. It is very easy to prepare at home, just mash the potatoes and green peas and saute them with some spices and prepare a stuffing. Stuff the breads and toast it in a sandwich maker. It tastes super scrumptious.

Directions

Getting ready:

Wash the potatoes thoroughly with water and drain out the excess water from it. Boil the potatoes until they turn tender. Allow them to cool down completely then peel off their skin. After that, mash the finely with hand and place it in a bowl.

Place a pan on flame. Once the pan gets heated, add cumin seeds to it. Roast it aptly. Now add butter to it. When the butter is melted, add ginger paste, green chilly, salt, dry mango powder and green peas to the pan. Mix everything really well. Cover and cook the green peas for 2-3 minutes on low flame.

After 2 minutes, remove the lid. Peas have turned soft. Mash them slightly with the spatula and add mashed potatoes and green coriander to it. Mix and mash everything together for few minutes. Stuffing is now ready. Turn off the flame.

Now make sandwiches. For that, take a bread slice and apply butter on it. Place 1 tsp of green coriander chutney on the slice and spread a thin layer of it.

After that, put some potato stuffing on it and spread it evenly as well. Apply some butter and chutney on another bread slice and place it on the top of stuffing. Similarly, stuff the rest of the sandwiches.

Place the stuffed sandwiches on the sandwich maker. Put the lid on and roast the sandwiches for 3 minutes.

After 3 minutes, open the sandwich maker. They have turned golden brown from both the sides. Transfer them on a plate.

  • You can take white bread instead of brown bread.
  • If you are using fresh green peas then parboil the first.
  • If you want to skip dry mango powder then add lemon juice to the prepared stuffing.
  • You can add red chilly powder to make it spicier.
  • Here we have added green peas but you can add any veggie as per availability and desire such as carrot, capsicum, etc.

Ingredients
  • Brown bread – 4 slices
  • Potatoes – 3 (medium sized)
  • Frozen peas - ¼ cup
  • Green coriander chutney
  • Butter- 2 tbsp (optional)
  • Green coriander – 2-3 tbsp (finely chopped)
  • Ginger paste – 1 tsp
  • Green chilly – 1 (finely chopped)
  • Dry mango powder - ¼ tsp
  • Salt – more than ¼ tsp or to taste
  • Cumin seeds - ¼ tsp
Instructions
  1. Mash the boiled potatoes.
  2. Roast the cumin seeds and add butter, ginger paste, green chilly, salt, dry mango powder and green peas to the pan. Cook the green peas for 2-3 minutes on low flame.
  3. Add mashed potatoes and green coriander to it. Mix and mash everything together. Stuffing is ready.
  4. Take a bread slice and apply butter on it. Place 1 tsp of green coriander chutney and stuffing on it. Apply some butter and chutney on another bread slice and place it on the top of stuffing.
  5. Place the stuffed sandwiches on the sandwich maker. Roast it for 3 minutes. Transfer them on a plate.
