Getting ready:

Rinse the parwal thoroughly with water. Drain out the excess water from it. Allow them to dry out completely. After that, peel out its skin with the help of a peeler. Remove the stalk from both the ends. Chop the parwal into small pieces.

Wash the tomatoes and green chillies thoroughly with water. Remove the excess water from it. Let them dry out completely. Chop the tomatoes, green chillies and ginger into rough chunks and put it into a mixer jar. Churn them together to make a fine paste.

Take a microwave safe bowl and pour some oil into it. Then add asafoetida into it followed by cumin powder, tomato-ginger-green chilly paste and turmeric powder. Mix everything really well. Place it inside the microwave and cook it for 2 minutes on highest temperature.

After 2 minutes, take the bowl out. Masala is now roasted aptly. Stir it with a spoon. Now add chopped parwal into the masala along with coriander powder, red chilly powder, garam masala, salt and chopped green coriander. Mix all the ingredients really well. Cover the bowl so that the moisture of the sabzi remains intact in it. Place the bowl inside the microwave and cook the parwal for 4 minutes on highest temperature. Check later.

4 minutes are over. Take the bowl out. Stir the sabzi really well with a spoon. Again place the sabzi back inside the microwave and cook it for 2.5 minutes more.

Take the bowl out after 2.5 minutes. Sabzi is now cooked aptly. Cover the bowl and leave it as it is for 2 minutes standing time. When 2 minutes are over, take off the lid. Stir the sabzi. Parwal korma cooked in microwave is now ready. Transfer it to a serving plate.

Ingredients
  • Parwal (pointed gourd) – 250 grams (12) (medium sized)
  • Tomatoes – 2
  • Green chillies – 2
  • Ginger baton – ½ inch
  • Oil – 2-3 tbsp
  • Green coriander – 2 tbsp (finely chopped)
  • Asafoetida – 1 pinch
  • Cumin powder – ½ tsp
  • Coriander powder – 1 tsp
  • Red chilly powder – less than ¼ tsp
  • Garam masala – ¼ tsp
  • Turmeric powder – ¼ tsp
  • Salt – less than 1 tsp (3/4 tsp) or to taste
Instructions
  1. Peel and chop the parwal into small pieces.
  2. Prepare a fine paste of tomato, ginger and green chillies.
  3. Take a microwave safe bowl and pour some oil, asafoetida, cumin powder, tomato-ginger-green chilly paste and turmeric powder. Mix everything really well. Place it inside the microwave and cook it for 2 minutes.
  4. Masala is now roasted aptly. Now add chopped parwal, coriander powder, red chilly powder, garam masala, salt and chopped green coriander. Mix all the ingredients really well.
  5. Cover the bowl. Place the bowl inside the microwave and cook the parwal for 6.5 minutes on highest temperature.
  6. Sabzi is now cooked aptly. Transfer it to a serving plate.
