    Getting ready:

    Rinse green chillies and tomatoes thoroughly with water. Drain out excess water from them. Allow them to dry out completely. Cut green chillies into half and place it in a mixer jar along with roughly chopped tomatoes. Churn everything together to make a fine paste of it. Keep it aside.

    Discard the stem and leaves from the ganth gobhi. Peel out the skin of the ganth gobhi with the help of a knife. Remove the stalk in the bottom. Also, peel out the potatoes with the help of a peeler.

    Place them in a bowl and pour water into it. Wash them thoroughly. Drain out the potatoes and ganth gobhi. Cut ganth gobhi into 1 inch pieces. Don’t make too big or too small chunks of it. Cut a ganth gobhi into 8 small chunks. Chop the potatoes in same way.

    Place a wok on flame along with some oil in it. When the oil gets heated aptly then add cumin seeds and asafoetida to it. Let the seeds splutter. After that, add turmeric powder, ginger paste and tomato-green chilly paste, coriander powder and red chilly powder into the wok.

    Saute the masala until the oil starts separating from its edges. Keep stirring at a regular interval of 1 minute. Keep the flame on low. When masala is roasted well then add chopped veggies into it followed by salt. Saute everything for about 1-2 minutes until the veggies gets nicely coated with the masala.

    Now add ¼ cup of water and stir to mix it well. Cover the wok and cook the veggies for 5-6 minutes. Check later. Keep the flame on low. After 5-6 minutes, remove the lid and stir the veggies. Again cover and cook it for 5-6 minutes, then check. Now 5-6 minutes are over. Uncover the wok. Water is completely evaporated so add 3-4 tbsp of water into it and cover it again and cook it for 5-6 minutes more.

    5-6 minutes are over. Remove the lid and check the veggies. Press a potato and ganth gobhi with the spatula. It has turned soft. Veggies are cooked aptly. It took around 35 minutes to cook the sabzi. Now add garam masala and chopped green coriander into the veggies.

    Gantha gobhi aloo ki sabzi is now ready. Turn off the flame. Transfer the sabzi in a serving bowl and serve.

    Ingredients
    • Ganth gobhi – ½ kg (500 grams)
    • Potatoes – 3 (250 grams)
    • Tomatoes (medium sized) – 2
    • Green chillies – 2
    • Oil – 2-3 tbsp
    • Green coriander – 2-3 tbsp (finely chopped)
    • Cumin seeds – ½ tsp
    • Asafoetida – 1 pinch
    • Turmeric powder – ¼ tsp
    • Coriander powder – ½ tsp
    • Salt – 1 tsp or to taste
    • Ginger paste – 1 tsp
    • Red chilly powder – ¼ tsp
    • Garam masala – less than ¼ tsp
