Getting ready:

Peel the gourds for making the sabzi. Remove the stalk as well. Likewise peel all the gourds. Rinse the gourds again after peeling them. Chop down the gourds in small chunks.

Place the chopped gourd in a microwave safe bowl for making this sabzi. Now add all the following spices to the gourds – salt, fennel powder, asafoetida, garam masala, cumin powder, turmeric powder, red chilly powder, coriander powder and green chilly. Add 1 tbsp to 2 tbsp oil to the sabzi as per your desire and preference. Mix everything really well so that the gourds are coated well with the masala.

Cover the bowl with a lid and microwave for 3 minutes on maximum temperature. After 3 minutes are done, take out the bowl and stir nicely. You can see juices released at the bottom from the gourds. Now add mango powder to the sabzi, followed by some coriander leaves. Stir to mix everything well.

Cover again and microwave the sabzi for 2 more minutes. After 2 minutes are over, take out the bowl and stir well. Sabzi is now cooked through and ready. Now leave the sabzi covered as it for 3 to 4 minutes and then serve. The sabzi continues cooking even when we take it out from the microwave. After 5 minutes transfer the sabzi to a plate.

  • Gourd - 250 grams
  • Oil - 2tbsp
  • Green coriander - 2-3 tbsp (finely chopped)
  • Green chilly - 1 (finely chopped)
  • Fennel powder - ½ tsp
  • Coriander powder - ½ tsp
  • Cumin powder - ¼ tsp
  • Dry mango powder - less than ¼ tsp
  • Turmeric powder - ¼ tsp
  • Red chilly powder - less than ¼ tsp
  • Garam masala - less than ¼ tsp
  • Asafoetida - 1 pinch
  • Salt - ¾ tsp or to taste
