    Easy Handvo Recipe – Baked Handvo Recipe

    Handvo is a baked dish prepared with various lentils,rice, veggies, sesame seeds and spices. Handvo is a traditional gujarati cake which is not only delectable but highly nutritious meal as well in its own as very less oil or ghee goes in making this super scrumptious savory handvo cake.

    This, high in protein and vitamin, baked cake can be served as a light snack in supper. You can bakes as well steam the handvo. So. go ahead and this easy recipe meticulously, surely you will end up with making perfect handvo. Enjoy!

    Directions

    Getting ready:

    Take soaked rice in a mixer jar and grind it into a coarse paste. Transfer it to a bowl. Then take soaked chana lentil and soaked moong lentil in the mixer jar and grind a coarse paste of it too. Add some water if required. Take it out in the same bowl. After that, take soaked urad lentil into the jar. Similarly, add some water if required and grind it into a coarse paste. Transfer it to the same bowl.

    Grease a baking container with some oil and brush it evenly.

    Making:

    Now mix the lentils paste and rice paste well together. Add grated bottle gourd, grated carrot and finely chopped cabbage into the lentils and rice mixture. Mix everything well together with the help of a spoon.

    After that, add ginger, green chilly, red chilly powder, turmeric powder, sugar, salt, chopped green coriander, lemon juice and curd into the mixture. Mix everything really well together to form an even batter.

    Let the oven heat at 200 degree centigrade and in the meantime prepare the tempering. For that, heat a small pan with some oil. After that, splutter mustard seeds and cumin seeds into the hot oil. Then add sesame seeds, curry leaves and asafoetida into it. Mix everything really well.

    Pour half amount of tempering into the handvoh batter. Mix it really well.

    Add baking soda into it and mix well. Don’t whisk it too much. Pour 2 tsp tempering at the bottom of the container. Now pour the batter into the container and spread it evenly. Tap the container so that the batter gets even.

    Pour some tempering on the top of the batter. Sprinkle some red chilly powder on the top. Place the container inside the oven and bake the handvoh at 200 degree centigrade for 15 minutes. Check later.

    After 15 minutes, handvoh have turned golden brown in color. It is ready now. Take it out from the oven. Poke a knife tip into it. If batter sticks on the knife then place it back into the oven and bake it on 200 degree centigrade for 5 more minutes with bottom rod switched on and above rod switched off.

    Handvoh is cooked aptly when the inserted knife comes clean and no batter sticks on it. Let the handvoh cools down completely. Transfer it on a plate. For this, run a knife all around the container edges so that handvoh gets separated from the container. Then transfer the handvoh on a plate.

    Serve this delicious and crispy handvoh slices along with some green chutney, tomato sauce or any sauce your desired.

    • Oil – 4 tbsp
    • Curry leaves – 8-10
    • Sesame seeds – 2 tsp
    • Red mustard seeds – 1 tsp
    • Cumin seeds – 1 tsp
    • Asafoetida – 1-2 pinch
