Getting ready:

Chop each cashew into 5-6 small pieces. Similarly, chop the rest of the cashews. Place it in a small bowl.

Take a vessel and add sugar to it along with 1.5 cups of water. Turn on the flame. Let it simmer until the sugar dissolves completely. After that, cook it for 3-4 more minutes. Check later.

To check the consistency of sugar syrup, take few drops of it in a bowl. Stick it between fore-finger and thumb. Stretch the fingers apart. If sugar syrup doesn’t stick on fingers then let it simmer for few more minutes. Then check again. When sugar syrup starts sticking on fingers then sugar syrup is ready. Turn off the flame.

Take mawa in a plate, crumble the paneer and add it to the mawa. Mash both the ingredients and add refined flour to it. Bind everything really well together and make a dough ball. Then mash the dough with the back of your hand and keep mashing it until it turns smooth in texture. Dough for gulab jamun is now ready.

Now prepare the stuffing for gulab jamun. For this, add chironji and green cardamom powder into the chopped cashews. Mix everything well together. Stuffing is now ready.

Pinch small portion from the dough. Roll it out in smooth ball. Apply some ghee on hands and flatten the dough. Fill it with some stuffing. Close the stuffing nicely. Again, roll it out into a smooth round ball. There shouldn’t be any crack on the rolled ball. Place it on a plate. Similarly, prepare the rest of the gaulab jamun balls until the mixture is utilized completely.

Pour enough ghee in a wok to deep fry the gulab jamuns. Place it on flame. Let the ghee melt completely. Ghee should be medium hot to deep fry the gulab jamuns. Drop few gulab jamuns into the hot ghee.

Gently fry the gulab jamuns on low flame. Don’t hit the gulab jamun with the ladle just splash hot ghee on it with the help of a ladle and fry them until they turn golden brown in color.

Gulab jamun are fried aptly. Transfer them on kitchen paper towel. Likewise, fry the rest of the gulab jamuns. Turn off the flame.

Drop the fried gulab jamun in sugar syrup. Let them drenched in it for an hour until they absorbs the syrup completely. Gulab jamuns are now ready.

Suggestions

  • If gulab jamun is splattering while frying in the ghee or it is too soft then add little more refined flour in the dough and mix it well.
  • If gulab jamun are hard then add 1-1.5 tbsp of milk into the dough and mix well.
  • Don’t dip gulab jamuns in very hot sugar syrup.
