    Getting ready:

    Rinse rice thoroughly with water. Drain out the excess water. Drench the rice in water completely and soak it for about 30 minutes. Take a microwave safe bowl and add 2 cups of water into it along with ghee or oil. Add rice to it and microwave it for 10 minutes. After 10 minutes, rice has puffed and ready.

    Heat a pan with some oil. Once the oil is heated aptly, add paneer chunks into it and saute them till they turn golden brown in colour. Transfer the roasted paneer chunks into a bowl.

    Add chopped carrots and chopped beans into the hot oil. Keep the flame on high and roast the veggies until they get crunchy. Now add chopped capsicum and chopped cabbage into it. Saute the veggies for 1-2 more minutes.

    Add chopped green chillies, ginger, chilly sauce and vinegar into the roasted veggies. Keep stirring the veggies continuously. Further add roasted paneer along with salt. Mix everything really well.

    Now add boiled rice into the veggies. Mix everything really well with the spatula. Keep stirring continuously and cook the rice for 2 minutes. Rice is now mixed well. Sprinkle some chopped green coriander on it. Mix it well.

    • If you want to cook rice in vessel then heat a vessel with 3-4 cups of water and let it simmer. Once the water starts simmering, add soaked rice into it and cook it till rice is puffed up completely. Then strain the cooked rice through a sieve and drain out excess water from it.     • You can use tofu instead of paneer. If you prefer eating onions then thinly slice an onion and fry it before roasting the veggies. You can also add spring onion into it. Roast all the veggies first then add spring onion into it.

    • Soya sauce – 2 tsp
    • Vinegar – 2 tsp
    • Green coriander – 2 tbsp
