    Getting ready:

    1.Remove the stem of spinach leaves. Wash them thoroughly twice with water. Place it on a sieve and let the water drain completely. As the spinach leaves dries chop them finely.

    2.Peel and wash potatoes and cut them into 1 inch sized pieces.

    3.Heat the oil in a pan. Add asafoetida and cumin to the heated oil. As the cumin splutters add green chilly, turmeric powder and coriander powder and stir a little.

    4.Now add potatoes and mix well then add ¼ cup of water. Stir nicely.

    5.Put the lid on and let the potatoes cook for 5 minutes on low flame.

    6.Remove the lid and stir the potatoes nicely then add the chopped spinach leaves and again let it cook for 5 minutes.

    7.Check the sabzi and mix it well. Now add salt and red chilly powder and mix it again. Now cook the spinach uncovered so that excess water gets evaporated. Finger licking stir fried palak aloo sabzi is ready to serve.

    • Spinach – 500 grams
    • Potato – 3 (250 grams)
    • Mustard oil – 2 tbsp
    • Asafoetida – 1 pinch
    • Red chilly powder – less than ¼ tsp or as per taste
    • Cumin – ½ tsp
    • Turmeric powder – ¼ tsp
    • Coriander powder – 1 tsp
    • Salt – 1 tsp or to taste
    • Green chilly – 2 finely chopped
