Miggi Pag or musk melon chikki is specially made in Uttar Pradesh for fasts on the occasion of Janmashthami. But you can prepare this sweet anytime or for any fast. Miggi Pag is really very tasty. So, today I am presenting a great and delightful recipe of Migi pag for you all. I used musk melon seeds and sugar syrup to make this recipe. You can also add some dry fruits and coconut to this chikki recipe.

The special part about preparing this sweet is that not too much of ghee is required. It can be stored and eaten for many days. Making migi pag is also easy to prepare and needs no extensive labour. Getting ready:

Take musk melon seeds on a plate and check if there is any dirt or peel in them. Grease a plate evenly with some ghee to use it later to set the chikki.

Heat some ghee in a pan or wok. Put the melon seeds in the ghee and fry on a low flame. If seeds pop out of the pan while frying then cover the pan holding the lid in one hand and stir the seeds using a spoon with the other hand.

Once the muskmelon seeds turn little brown in color then turn off the flame. Take them out on a plate and keep it aside.

Now make sugar syrup for the paag. For this, take sugar and 1/3 of water then sugar in a pan and put the flame on. Let it simmer until the sugar dissolves completely into the water. Keep stirring at regular intervals.

Keep checking the texture of the syrup after every minute. Put 1-2 drops of syrup in a bowl and after it cools off then place it on your finger. Now try to stick the drop between your thumb and index finger. While separating the fingers a thread looking substance should come out of syrup. If you feel that there are no threads coming from the syrup then cook for another 2-3 minutes. If thread appears between the fingers that means syrup is ready.

Now put roasted muskmelon seeds into the syrup and mix them well with a ladle. Turn off the flame and keep stirring the mixture until the sugar syrup cools down and starts becoming frigid.

Spread the muskmelon seeds mixed with syrup on the greased plate. Solidify into ½ inch thick layer of paag. Paag will turn solid in 1/2 to 1 hour. Cut Paag into squares or polygon shaped pieces and enjoy!

Serve this delectable and crispy muskmelon seeds paag as a dessert after the meal. Store the remaining migi paag in an air tight container, whenever you feel like having something sweet take them out from the container and enjoy for a month.

 

Suggestions

  • There is a slight difference in muskmelon seeds chikki and its paag. For making chikki we caramelize the sugar whereas we prepare sugar syrup for making paag. Both have different taste too.
